Variety characteristics:

• 73 Polaris is a midseason, indeterminate beefsteak tomato bred in Canada by Karen Olivier as part of her True North series. Potato-leaf plants produce large, flattened fruits typically weighing about 8.8–15.9 oz, with occasional fruit growing larger. The skin develops dusky purple, mahogany, and green-shouldered tones, while the dense, juicy interior is a rich red-purple with relatively few seeds. Its complex, full-bodied flavor balances deep, tangy notes with satisfying sweetness. Productive vines are well suited to cooler or shorter-season gardens and need sturdy support for their heavy fruits. Enjoy the large slices fresh in sandwiches and salads, or use them for sauces.
