Plants develop upright, pointed pale-green leaves surrounding a substantial central stem that can reach approximately 1–1.3 inches in diameter. The main shoot is typically ready for harvest approximately 45–50 days after transplanting. After the central stem is cut, established plants can produce approximately five to six harvestable side shoots, extending the picking period when growing conditions remain favorable.
- Young stems are crisp, tender, and relatively low in fiber, with a mild, gently sweet mustard flavor. Harvest the shoots while the stems remain succulent and the flower buds are still compact. They are excellent for stir-fries, steaming, blanching, soups, noodle dishes, and other quick-cooked preparations. Plants may also be harvested as young mustard greens approximately 25–30 days after emergence.
